Getting in your post-workout protein doesn't have to be boring!
3/4 to 1 cup milk or almond milk
2 cups rolled oats, pulsed into a powder
2 scoops vanilla whey protein powder
1 tablespoon maple syrup
2 teaspoons baking powder
1/2 teaspoon salt
1 egg white
1/3 cup peanut butter
2 tablespoons maple syrup
In a blender, add all ingredients except egg white. Blend until smooth. Whisk egg white until stiff peaks form, then fold into the batter.
Spray a skillet with nonstick cooking spray and place over medium-high heat. Pour in 1/3 cup pancake batter. Let cook until bubbles begin to form on the surface, then flip. Repeat with remaining batter.
Melt peanut butter and maple syrup and pour over pancakes. Top with berries and enjoy.
