Pan fried sole! Mediterranean style, a nice way of frying sole if you want to have something different then the classic sole meunière. Nothing better than fresh from the bone, together with some flavoured olive oil. A great looking dish ready in the blink of an eye.
It was more than 10 years ago when I visited the MSC certified Hastings dover sole fleet in the South of England. Beautiful fishermen, the most authentic way of fishing and delicious flatfish caught by Paul and Graham. Many thanks for opening my eyes to true sustainable fishing lads. Enjoy!
