The classic potato sabzi for a filling lunch or dinner.
BATATA NU SHAAK
4 large potatoes, peeled, washed and cut into 1 inch cubes
2 tbsps oil + deep frying
2 tbsps white sesame seeds
½ tsp turmeric powder
2 tbsps coriander powder
1 tsp red chilli powder
Salt to taste
1 tsp sugar
¼ cup freshly chopped coriander leaves
1 tbsp lemon juice
Coriander sprig for garnish
1. Heat sufficient oil in a non-stick pan, deep fry potatoes till golden brown and crisp. Drain on an absorbent paper.
2. Heat oil in a non-stick pan, add white sesame seeds, and let the colour change. Add the fried potatoes and mix well on high heat.
3. Add turmeric powder, coriander powder, red chilli powder, and reduce the heat and add salt, sugar, and mix well.
4. Switch the heat off and add chopped coriander, lemon juice, andmix well. Transfer to a serving bowl, garnish with coriander sprig and serve hot.
