A delicious rice recipe to try something fancy for today's lunch or dinner.
1½ cups rice, soaked and drained
100 grams surti papdi, stringed and broken into small pieces
3 tbsps ghee
½ inch cinnamon stick
1 inch ginger, chopped
2-3 green chillies, chopped
3 tbsps green chutney
Salt to taste
2 tsps lemon juice
Coriander sprig for garnish
1. Heat ghee in a non-stick deep bottom pan, add cloves, cinnamon stick, ginger, green chillies, and sauté for 30 seconds.
2. Add surti papdi, and saute for 2 minutes. Add rice and mix well. Add green chutney, salt and mix well. Cover and cook till rice is done.
3. Switch the flame off and add lemon juice, mix well. Transfer to a serving bowl.
4. Garnish with a sprig of coriander and serve hot.
