We visited the amazing fishing community of Kwikpak Fisheries in the small village of Emmonak, at the border of the Yukon river in Alaska! The local Yup'ik Eskimo community is fishing here for the very best Keta salmon for more than 10.000 years. Wild, natural and sustainable. These small scale sustainable fishing actions make sure there is more than enough wild Alaskan salmon left for spawning upriver. I'm using this amazing oily Keta salmon to cook 'en papillote', in a package, with capers, olives, tomatoes and herbs. Easy and delicious! Enjoy.
