2 beets, boiled for approximately 45 minutes
1/2 cup melted coconut oil
1/2 cup vegan dark chocolate chips
1 cup rice flour
2 teaspoons baking powder
1/4 cup ground flaxseed
1/2 cup coconut sugar
1/4 cup agave
1 teaspoon vanilla extract
1/2 cup cocoa powder
1/2 cup almond milk
Preheat oven to 350 degrees. Prepare a baking dish with parchment paper.
Peel and chop beets. Blend beets with coconut oil. Transfer to a mixing bowl. Mix in remaining ingredients, leaving some chocolate chips for top.
Spoon mixture into the baking dish, and sprinkle with remaining chocolate chips. Bake for 20 minutes. Allow to cool for at least 30 minutes before cutting.
