For the Waffle
3 1/2 cups, Sweet Rice Flour
1 cup, Granulated Sugar
2.5 cups, Water
1 tsp, Vanilla
1/2 tsp, Salt
1 3/4 cup, Corn Starch
Matcha Ice Cream
1. In a microwave safe bowl, combine Rice Flour, Sugar, Water, Vanilla and Salt and mix until smooth. Heat in microwave on high for 2 minutes.
2. Add Corn Starch to a shallow pan and spread out evenly. Pour Mochi mixture over top, and coat dough. Divide dough into even pieces the size of a golf ball.
3. Heat waffle iron on medium high heat and slightly grease with butter. Add dough to middle of iron, and close. Cook for 5 minutes. Remove from iron and allow to cool.
4. Top with Red Bean and Matcha Ice Cream. Enjoy! :)
