Chicken pieces cooked with lot of fresh vegetables in freshly made thai green curry.
THAI GREEN CHICKEN CURRY
200 grams boneless chicken, cut into 1 inch pieces
½ cup Thai green curry paste
2 tablespoons oil
1 small yellow zucchini, cut into triangles
1 small green zucchini, cut into triangles
12-16 broccoli florets
Salt to taste
2 cups coconut milk
12-16 pea brinjals
1 small green capsicum, cut into triangles
1 small red capsicum, cut into triangles
Zest of 1 kaffir lime
2-3 fresh red chillies, diagonally sliced
5-6 fresh basil leaves, hand torn
1 tablespoon palm sugar
1. Heat oil in a non-stick pan. Add green curry paste and sauté till fragrant.
2. Add chicken pieces, yellow and green zucchini and broccoli florets and mix well. Add coconut milk, stir to mix, cover and bring to a boil.
3. Add pea brinjals, green and red capsicum and mix. Add kaffir lime zest, red chillies, basil leaves and palm sugar, mix well and cook till fully done.
4. Serve hot.
