Parboiled baby potatoes tossed in a pan along with an interesting spice mix. You can't stop at one.
JAMAICAN JERK POTATOES
20-24 baby potatoes, parboiled and peeled
1 tablespoon onion powder
1 tablespoon garlic powder
1 tbsp nutmeg (jaiphal) powder
1 tbsp cinnamon powder
1 tbsp all-purpose seasoning
1 tbsp dried oregano
1 tbsp dried rosemary
1 tbsp smoked paprika
1 tbsp red chilli powder
Crushed black peppercorns to taste
1 teaspoon castor sugar
Salt to taste
2 teaspoons red chilli flakes
1 tablespoon oil
2 teaspoons chopped fresh parsley
Fresh parsley sprig for garnishing
1. Mix together onion powder, garlic powder, nutmeg powder, cinnamon powder, all-purpose seasoning, oregano, rosemary, paprika, chilli powder, crushed peppercorns, castor sugar, salt and chilli flakes in a bowl.
2. Heat oil in a non-stick pan. Add potatoes and toss.
3. Add spice mix, toss and cook for 1-2 minutes. Add chopped parsley and mix well.
4. Garnish with parsley sprig and serve hot.
